Blueberry-Lemon Dessert Pizza with White Chocolate Drizzle

imageAs soon as I saw a new lemon sugar cookie dough in the grocery store, I knew I had to use it in a dessert. I decided to make a simple and easy dessert pizza. There’s nothing better than fresh blueberries to go with lemon.  I paired the lemon cookie crust with a lemony cream cheese frosting.  To finish, I drizzled the entire pizza with melted white chocolate.

Here are my Notes

1)I only used one package of cookies, but if you want a thicker and more chewier cookie crust you could use two packages.

2)If you use only one package of cookie dough, your crust will not cover the baking sheet. If you use two packages, it will definitely cover the pan.

 

Blueberry-Lemon Dessert Pizza with White Chocolate Pizza

 

Ingredients

1-2 packages refrigerated lemon sugar cookie dough, chilled

1 (8oz) package cream cheese, softened

1 stick butter, softened

2 1/2 cups powdered sugar, sifted

1/2 teaspoon lemon extract

zest of one lemon

1-2 packages fresh blueberries

1/2 white chocolate chips, melted

Directions

Line a baking sheet with parchment paper. Preheat oven to 350 degrees.

Press chilled cookie dough evenly  into prepared baking sheet. Bake in preheated oven for 15-18 minutes, until edges are golden brown. Let crust cool completely before frosting.

While crust is cooling prepare the frosting. Place softened cream cheese and butter in a large bowl, cream together with an hand held mixer. Slowly add in sifted powdered sugar. Then add in lemon extract and lemon zest, beat until fluffy.

Assembly

Evenly spread frosting over the top of the cooled cookie crust. Top with fresh blueberries and then drizzle pizza with the melted white chocolate
