Copycat Starbucks Lemon Pound Cake {Cake Mix Verison}

I LOVE the Iced Lemon Pound Cake at Starbucks. The thick-lemony icing is my favorite part ! Now you can make it at home with this easy cake mix version. This loaf cake is bursting with lemon flavor and it’s super moist. I’m a huge lemon fan and this cake does not disappoint. This cake screams spring with it’s bright yellow color.

Here’s my Notes:

1) The secret to the icing is the melted butter. It thickens the icing and causes the icing to harden, like the Starbucks cake. So be sure to not skip it !

2) There is going to be to much batter to try and put in your 9-inch loaf pan. DO NOT fill your pan all the way up. It will run all over the sides and you will have a mess. Fill the loaf pan 3/4 full and use the left over batter to make cupcakes or mini loaf pans. Mini bundt cakes would be super cute !


Copycat Starbucks Lemon Pound Cake {Cake Mix Version}

Yields: 8 generous slices

Prep Time:5 minutes

Cook Time:50 minutes


1 (18.25oz) box Classic Yellow cake mix

1/3 cup vegetable oil

4 eggs

1 1/3 cup whole milk buttermilk

2 (2.9oz) boxes lemon pudding

juice of one lemon


Prepare a 9×5-inch loaf pan, spray with non-stick cooking spray. Preheat oven to 350 degrees.

Add all of the ingredients to the bowl of a stand mixer fitted with a paddle attachment or a large bowl and mix with a hand held mixer. Mix on medium speed for about 2 minutes. Pour batter into prepare pan, filling pan 3/4 full and baking in preheated oven for about 50 minutes or until toothpick inserted into center comes out clean. Cool in pan for about 20 minutes then remove cake from pan to cool completely on wire wack.

5 Tablespoons butter, melted

2 cups powdered sugar, sifted

juice of one lemon

pinch of salt

While cake is cooling prepare icing, mix ingredients together, icing will be thick.

To Assemble

Place cooled cake on a plate. Spread icing over top and slice to serve. Enjoy !

To store: Cake can be left covered overnight at room temperature ,but placed in fridge after day two.

    Tried this cake today and it was great, one mistake I used a bundt cake pan instead of the loaf pans which I do not own., but will purchase one. The cake is great but like you said the icing is thick . Let’s just say that it’s an ugly cake but delicious. Thanks for the recipe.
